But why, oh why is his hair blonde? 

Apart from that, I think he looks pretty damn cool. Dracula would've looked better if he had his more regal, lips closed pose from the SOTN art than baring his fangs. That look has been stupid ever since Christopher Sarandon ruined it.

His hair color changes, and those are from Symphony as I take it and his is blonde in that.

It hasn't always been blonde. In some of the SOTN pictures it's blonde but in most of them it's silver/white. It's also white in the game.

Go take a look at the pictures on SOTN page in the Dungeon. 4, 5, 6 as well as the Saturn and Japanese artwork (and covers) all portray him with white hair. In picture #5, which the figure seems to be the most closely modeled after, his hair is white.

Minor detail, I guess. I've just gotten use to thinking of Alucard as having white/silver hair, not blonde.

Um, his sprite's hair is white. Being that I've played the game every year since 1997 I've done more than just glance at his sprite.

Pictures Alucard 1, 2 & 3 definitely show him with pale blonde hair, no argument. The rest show his hair as being more white than any shade of blonde. Off-white in some cases, sure, but decidely not blonde.

Only three pixels of his sprite's hair are white. The majority of it is pale yellow with hints of grayish green.
