All of them are awesome but if I would pick one:

Character Theme: Awake - CotM
Stage Theme: Enemaos Machine Tower - CoD (especially that one from the 1 hr medley from monjakure), maybe because it's full of feels or some attribute.

Leon's Theme in LoI!
I've always thought the piano sounded like it's playing a classic silent movie soundtrack where the main character has to rescue his lady. At the end of the game, it really makes me feel like I need to see things through. Totally an underrated track.

As a rule, I answer this with Sinking Old Sanctuary (any version), but it's a very difficult question.

Crystal Teardrops deserves honorable mention.

My favorite music piece will always be Clockwork, in his CVIII version (NA version, by the way :P). I can`t get tired of hearing such track, I love how the Clock Tower feels with that music :).

Another shout out for Dance of Pales.  Quite partial to Opposed Bloodlines (love that violin intro in CV64).  Praying Hands, Forest of Monsters . . . argh there are too many!

In case you're wondering they brought back this tune for the machine tower in CotM. It was a nice remake  :)

Crystal castle or New Messiah rocks my socks off in fact Belmont's revenge has one of the best Soundtract's in the entire series. But to say make a top 10 would be very, very difficult

My most played I-pod song is this

https://www.youtube.com/watch?v=Y8Uqy9L_xtk&noredirect=1

Ahh god this song is just so CV one can't deny that this song is so Castlevania. It's so powerful, dark, ominous, it gives me a feeling of when I look into the distance I wonder what's out there and when I'm studying I feel like I'm finding out the Da vinci code. It stuck with me when I was controlling the sun and moon making an eclipse in LoS it's just a powerful song and it's without in my top 3 cv songs.

another one I like is The Discolored Wall

https://www.youtube.com/watch?v=vkQ-gLY-Xag&list=PL02F5BF9F8FBE5CF3&index=8

This played in Italy such a messed up song and the whole level was just so incredible iirc a fountain of blood just spewed out of no where. JUst an incredible level hell bloodlines is incredible and I'll say this right now: alot of folks put Yamane at the top because of SOTN and her other works but bloodlines just blows it out of the water for me.

Sinking Old Sanctuary. The Bloodlines version. In my mind, there's just no competition. (Well, Awake from Circle of the Moon was pretty good, but still...)

Awake is pretty awesome!  I think I'd have to go with Sinking Old Sanctuary though from the N64.

Not sure I have a favorite, but "Stalker" gets stuck in my head quite frequently. As a kid (and even now) I had my own words to go with it. "Down-down boogie! Down boogie! Down-down boogie! Boo-gie!"

X-D  I do that too, although usually only with "la la's", "na na's", and "doot do's"...as if those could be considered legit lyrics! ;-)
