How does touch controls even work with platformers? Is there some sort of graphic on screen representing the buttons?

There's a fixed jump button on the screen. All of the other commands - walking, attacking, using the various items you can equip - are all motion gestures with your fingers.

You can easily remap them to buttons. In fact, if you play on a PC emulator, you can likely do this for the actual phone game.

That's true, I've seen it done via Bluetooth functionality. If anyone has a controller with Bluetooth capability then they can use that for playing games on an iPad or iPhone.
