Rata Blanca is a band from Argentina that's been several times to Spain and Portugal. With the only exception of their last album (which is in english), lyrics are always in spanish. It is heavily influenced by Yngwie Malmsteen and Ritchie Blackmore, and obviously from baroque and classical music.
Lyrics mostly speak about magic, castles, holy wars, swords and mythology.
But what captivates me the most is the great similarity their music have with Castlevania characteristic structures, in terms of chords progressions, arrangements and melodies, especially with more modern games like Symphony of the Night, Curse of Darkness, Lament of Innocence or Harmony of Despair, which are at times more oriented to melodic metal sounds with distorted electric guitars.
Here's a sample of their music, which in my opinion is one of the most Castlevania-ish themes they have, especially at the guitar solo.

For the most neoclassical sound, search for their earlier works, especially the one displayed here, called "Magos, Espadas y Rosas" (Wizards, Swords and Roses), although their recent albums always include a couple of baroque inspired themes.
