Not that we can take the story for this game too seriously, but here's the story from the game and instruction manual. It confirms Christopher's position in the timeline pretty well. It does make it seem like Dracula has been defeated by the Belmont's many times before Christopher though, but perhaps it is talking about Dracula in general in the first few sentences and then takes us to the "now" part when it says "100 years have past since Dracula's demise". I'm glad it shows all sorts of flashbacks to Dracula's Curse in the images, but only shows that game.
Of note is it says that only "now" that Dracula is a demon king. Sounds like he didn't become one until after he was killed by Trevor. Possession of the Crimson Stone and Death at his command wasn't enough before? Guess he needed to take a trip to hell first. They totally need to tell the story of how he became a demon king at any rate.
Also, this is the first time I recall him summoning monsters by using innocent people as sacrifice. Sure, he's sacrificed people to increase his power, which might be the same thing, but maybe this represents a shift of using alchemy and devil forgery to create monsters to summoning them from hell using human sacrifices?
Another tidbit of note is that it doesn't mention Dracula getting revenge on the Belmont Clan like the localized US version of Castlevania: The Adventure or Castlevania: The Belmont Legacy comics. He just rose up for round 2 against humanity and Christopher decided to head out to stop him.

Time after time, throughout history, Dracula was defeated by the Belmonts, a family of vampire hunters who brought peace to this land.
100 years have past since Dracula's demise, and with the fear of him gone, he rose again along with his castle to scourge the land with his evil.
With such a tragic history repeating itself, Christopher, a descendant of the Belmonts, decided to stand up for humanity against the demon. He alone seeks to infiltrate the dark castle where demons run rampant.

The evil Count Dracula built his castle in the suburbs of Transylvania, summoning monsters from the other world by using innocent people as sacrifice.
Now that Dracula has become a demon king, Christopher Belmont from a long line of vampire hunter ancestry set out on his journey to Dracula's castle in order to defeat him.

Well, one could say that between the events of LoI and CV3, Dracula was just a really powerful vampire who used alchemy and/or devil forging to create his own monsters. Or, he could have simply made use of devil forgemasters to do it for him. However, with the betrayal of Hector and defeat in the past, he could have decided to summon demons directly from Hell instead of creating them though magic. Besides, demons summoned from Hell could be a lot stronger than demons created through devil forging. Also, it could be said that Dracula didn't know how to summon the demons until he was killed and sent to Hell himself.
Then again, this is only speculation seeing how the story is pretty vague and the official timeline has plotholes.

Why do they say that is has been 100 years since Dracula's demise? They kind off ignored the stories of CoD (and the Castlevania Pachinko slot?) there. :-X It would be interesting if the Belmonts had already defeated Dracula many times at that point. Gives more space for new games between 1476 - 1576.

yeah, i wish we had some clear answers to what happened during Pachislot. i assume it's not canon, but you never know, it had Iga's involvement in some capacity.

The impression I got from Rebirth's opening slideshow was that Chris' story takes place after CVIII and before CVI. Zennyway, isn't Simon Soleiyu's son?

I guess Simon was so cool, that Solieyu's Belmont Warlord Chromosomes was all reserved for that one Simon cell, allowing Dracula to easily overtake him.

If Order of Shadows actually took place and there was an unbroken chain of male heirs for the Vampire Killer whip, Desmond Belmont would be Soleiyu's son and Simon's father.

The dates seem a little off, but I guess it just means a lot happened in 100 years

Hmm...aboot the sacrificing innocent people bit, I was under the impression Dracula had always done that. I mean, in Rondo he turned Richter's girlfriend into a vampire if you didn't rescue her in time, and I figured he generally used the corpses of innocent people to become his zombies, skeletons, etc.

yes, he's "always" been sacrificing people for various reasons, but i haven't seen it spelled out that he "summoned" monsters by doing this before. he had sacrificed people to give him power (usually to return himself to full strength after just reawakening or to simply return to this world with). perhaps he could sacrifice a person to gain power, and then he could decide to "spend" that power on summoning monsters?
in Dracula's Curse, one way in which he created monsters was indeed by transforming humans, and not necessarily by killing them first. He did this to Grant DaNasty and his companions. another case where this happened was the transformed Lizard Man in Castlevania 64.

This was the first time he had truly died, and Adventure is his first "complete" resurrection. The resurrection in CoD doesn't matter because he was only around for like ten minutes. Plus, only a couple of people knew that he was resurrected, so it's knowledge has probably been lost to time.
As for the sacrificing humans to demons: Dracula was the one who taught Hector and Isaac how to Demonforge. So I'm assuming they all did it similarly. Which means that the demons Dracula summoned and turned into his army were all originally Innocent Devils. In Adventure, if Dracula is sacrificing humans to raise demons, then they wouldn't be innocent. So this would be the first time true demons are being used for his army. Since this is the first time he's been resurrected at full power and he's sacrificing humans to create a demon army, I think that it would be the first time he was truly the Demon King.

I was just lookin up some info and ran across something on wikipedia, which mind you isn't the best source for stuff, but it states that Adventure ReBirth takes place in 1591 the same year that Belmont's Revenge takes place and bumps BR back to 1606. Now from my understand it was established in the most recent time line that Adventure took place in 1576 with Belmonts Revenge taking place 15 year afterward in 1591. Is this a mistake by someone who got on wiki? Or does it actually state in ReBirth that it takes place in 1591? If so was it another tid bit with in the time line that got retconned by IGA? Since I haven't played ReBirth I dont know if it states it or not but seems to me if was something retconned IGA has really thrown a wrench into the time line.

A more proper thing to do would be to add 100 years to the date for Dracula's Curse, since the in-game text says it has been 100 years since Dracula's demise. I don't see anything on the Konami web pages (Japanese or English) that actually date this game, nor any in-game text. Konami's timeline on the internet still says 1576 for Adventure and 1591 for Belmont's Revenge.
