Here is something I've been thinking about for a while: What would happen if Alucard fed on someone? Would they turn? If so, into what? I mean would they become a full vampire or something else? Alucard is a dhampir (half human, half vampire). So it seems weird that his victims would become full vampires when he isn't one.

They would turn SUPA SAIYA-JIN okay maybe not.
Really interesting question, though. Couldn't find a definitive answer with a quick search. Maybe it just curses the victim's blood and causes a slow death? I don't know.
I guess i've never thought of this, since every dhampir i've ever heard of has either hunted vampires or killed his/her victims outright.

Last time I checked a Vampire (or dhampir) had to infect someone with their own blood in order for them to 'turn'. The biting act is with Zombies and Lychans due to the bacteria or virus in their mouths. Vampires don't have that kind of problem though. But I do have to wonder if a dhampir's blood can turn a human into a vampire or another dhampir...

I think it depends on the version of what a vampire is. In some movies and stories, all the vampire needs to do is bit the human (this seems to be the case in CV such as with CV64). An example would be the Blade movies. In those movies, once you were bitten, it was almost guaranteed that you would eventually turn. In other media, the human needs to drink the vampire's blood when he/she (the human) is near death.

I am guessing that in those cases the vampire's fangs have venom in them like a snake.

They would prolly turn into ghouls.Since Alucard is only half vampire, he can't turn them into full vampires, even if they drink his blood. And ghouls are said to drink blood. The origin of the word is from the Arabic (Ghul) . A Ghul in Arabic folklore refers to a " a desert-dwelling, shape shifting demon that can assume the guise of an animal, especially a hyena. It lures unwary travellers into the desert wastes to slay and devour them. The creature also preys on young children, robs graves, drinks blood, steals coins and eats the dead, taking on the form of the one they previously ate. I underlined the most important part, the one that's related to its habit of drinking blood.
I know that Ghouls have already been portrayed in CV, but not in the way they are in this definition. Still it would be interesting to learn how those humans were turned into ghouls.

Who knows if it'll work at all. He might be simular in the way that a mule, horse + donkey, can't breed (from what I know).
Maybe because he's a hybreed, it's just not possible to "reproduce," so to say due to a lack of a better word.
