i'd have to say Shanoa, as I'm partial to the long dark haired ones, but feel that's not a very interesting answer.

Fake Sypha from Symphony of the Night would probably be second.  She had such gorgeous long blond hair blowing in the wind while she hovered above.

Lisa, to me, is more of a "righteous martyr" figure than a "sexy" figure, a lot more like a mother than an enchantress... But she is indeed the portrait of beauty and purity.

The anime style in the game does not do her justice. She's a sexy character and if someone like, say, Kojima drew her, that would be full-on epic.

And I actually do think the SotN succubus is positively gorgeous. I can't get past the LoI succubus' freakish toenails.

EDIT to include Maria. She is drop-dead gorgeous. The reason I didn't include her is because my name is Maria also, and saying "Maria is hawt, hurr hurr" kind of feels...uhm...awkward because of it.

It's a tough call.

EDIT: I can't believe I forgot Loretta. I did mention Stella but I positively love this picture from the soundtrack poster (a continuation if the picture above...oh my.)

I actually like Lisa's style a lot in her portrait.

But still Maria, Sypha, and Sonia for me. Probably in that order as well.

i enjoyed Loretta for a while for being the "long dark haired beauty", but then she was usurped by Shanoa in that role.

i could be mistaken, but I thought Kojima did do the artwork for the OST for PoR (source for the pics posted above).  or did she do that only for Dawn of Sorrow?

So far we've only got Jonny and Charlotte. And Charlotte looked pretty damn nice.

No, that was an artist that should've done PoR's main artwork. Ayami only did DoS's, but I think that might be because AoS's soundtrack was included, too.

ooooh those! Those were from the OST? huh.

The first one with Soma is cool too, but it always irked me that it looks like something is taking a shit of darkness on his shoulder.

The images aren't showing up, getting the typical "hotlinking is not allowed" message when I click. I did manage to trace the link to Mr. P's Castlevania Realm, and I found...official art of Laura the Jeweler. :) Good show, good show. Although I do think Shanoa is more attractive, Laura's definitely a looker.
