If, say, you get stuck because your techniques just aren't powerful enough, is it possible to go back to another mission and just keep playing it over to farm exp, or if you make bad skill choices are you just screwed?

Yes. In the pause menu there is a "World Map" selection. This is the equivalent of a level selection.

I'm not quite sure how the XP system works in LoS, to be honest. I know it's worth killing enemies for the neutral enemy, but otherwise, I've got no clue. I just kill everything in sight and assume it's like the SotN XP system.

Every enemy gives you EXP. You can actually turn on a number display for the amount of EXP gained for each kill, when the enemy falls. You can show damage numbers too if you'd like. It's all in a special menu in the options somewhere. Not sure what the actual menu name is, but its slightly obscure.

Oooooh, okay. That clarifies things for me.
Also, I feel like such an idiot after missing that. I mean, I went in there to turn on enemy life gauges. >.<
