There's been some discussion regarding the quality of portable Castlevanias lately, especially when it came to comparisons.
Metacritic shows somewhat of a worldwide opinion on the matter, and somehow, it reflects an objective reality.
Not that I completely agree with this ranking, but that's the way it is today.

I'm surprised Harmony of Dissonance is one of the higher ones, and its a bit disappointing to see the Classic NES Series so low. Were there porting problems or something?

Since Harmony of Dissonance is one of my favorite titles, Im not so surprised (except by the fact that everyone bashes the music and graphics).

It must be because almost everyone thinks that Castlevania = Metroidvania. Thats not my opinion, but the great majority of new players these days seems to think this way. I've friends that doesnt played Rondo only because its in the clasic style.

I know difficulty is actually a legitimate reason for poor reviews nowadays. IIRC, Fire Emblem: Radiant Dawn got a little slammed for it.

The real question is why isn't the double pack higher? It's two games in one.

Probably because it's so good even "bad" gamers can't knock it too hard.
My roommate played nothing but Skyrim, GTAIV, and Fallout, but managed to get him to love Dark Souls just because of how excellent it is.

Maybe the Double Pack is below the others because its "more of the same". Yeah, some reviewers seem to really think like that.

The Adventure: Rebirth only got a 78, and that was pretty darn traditional. Good game too.

I didn't notice any problem with Classic NES Series.
As for that game and the Double Pack, I imagine that it's because they don't have anything extra. Critics usually give less points when they don't add something.
And as for DXC, I imagine the score is 80 because it's not Rondo exactly, but a 2.5D remake. I'd like to think Rondo would get more than 90 at least.
MetroidVania is great, but every MetroidVania fan should play all the Classics, or they will be missing many great titles, being especially Rondo the best one to me.
Harmony of Dissonance is great in my opinion, but I know a lot of people that complain about the music and graphics.
In a proper console, graphics look very good. They look bad on emulators, I don't know why.
As for the music, it took me a LONG time to realize and understand what the composer was thinking, but when I got the progressive feeling, it became enjoyable to listen. I've been criticized a lot for liking that soundtrack, but I will always defend it because that's my opinion. Of course, I prefer the traditional CV music, but just as with LoD's music, I like it.
And I don't think difficulty should be so important when evaluating a game. I remember Rebirth being criticized for the difficulty, and it turned out very easy for me, so that I had to play it on hard and classic style, to enjoy it more. That way, the experience was fabulous.

Best part of Harmony of Dissonance was the magic/subweapon system. I think it was IGA trying to make something as cool as CotM's card system.

Not surprising. Symphony of the Night is both the series's most heralded game and its most enduring legacy, which means that its probable that most Castlevania fans started with Metroidvania games.

Well, I wouldn't deny the fact that it was the first Castlevania game I played.
Though I was aware of the NES games, I just didn't play them. I was young and really bad with hand eye coordination during those years.

Observing a review aggregate of several individual games and making qualitative statements based on it is sketchy at best. There's a wide variety of cumulative circumstances affecting the impression each game left on the reviewers at the time of release. They don't exist in a vacuum, and contemporary perspectives can wildly differ from those held in the past.
For example, Circle of the Moon is rated so high not because of any intrinsic value found in the game itself (don't start), but because of several tangential factors that made it appealing at the time. It was the first of the games following in Symphony's footsteps, it was a Game Boy Advance launch title which gave it an elevated status of importance, it was a showpiece for the capabilities of new handheld technology, it was a return to a more accepted form of 2D play after the badly-received N64 titles... all of these affected its overtly glowing critical reception in its day. It is nowhere near as highly-regarded in retrospect, even if its contemporary reviews give that impression.
More issues come with rereleases like DXC: the port quality is crucial, as well as understanding its nature as a compilation. A singular review score of the Dracula X Chronicles cannot be taken as a definitive critical statement on Rondo of Blood, Symphony of the Night, and the 3D remake of the former all in one. It should be an evaluation of everything contained in the release, which is indeed three very different games, two of which are ports of the originals (not very good ones at that), and thus ill-suited for serving as an accurate reflection of either game's merit as found in their original releases. Multiple levels of competence have to be taken into account in reviewing releases like that, and I'm not confident every writer did.
Rereleases also do not carry the same critical impact as their original counterparts, even if the porting quality is equally good or close to it. The Double Pack is rated lower than either of the individual releases of the games it contains in flawless quality. In objective terms, it's superior to either Harmony of Dissonance or Aria of Sorrow simply by the virtue of featuring them both, but it is still just a rerelease of well-trodden material, however well-made. Its release happened only a few years after the original games came out, and on the same platform no less, so it didn't warrant a lot of excitement in the grand scheme of things.
If anything, services like Metacritic possess their most useful functionality in cataloguing a database of reviews written about a subject, and providing links to those articles. Researching critical assessment should be conducted by reading on a case-by-case basis, not by staring at how numbers compare to each other.

I don't see any problems with DxC ports at all. Great games, played normal just like I remember them.
