Out of all of the Castlevania games, which one feels the most like an unapologetic self-insert fanfic for the writer/producer/director/whatever where the heroes are completely perfect and flawless and the villains are shallow and only exist to make the self-insert heroes seem even more heroic and flawless in comparison?
Surely there must be one.

you're right, forgot the Brauner was the only villain with a buyable motive in most of the Cv games

Maybe Rondo of Blood too? I dont know if I understood the question, but in Rondo of Blood the main characters seems perfect and Dracula acts like "Oh Im so bad... kiss me Annete... Shaft! Where is my drink?!".

DoS definitely fits this. It was just a poor excuse to reuse Soma. IMO, AoS was a nice end point on the timeline. AoS gave a sense of finality. Soma, Dracula's reincarnation, was destined to be the "new" master of the castle and essentially where is previous life left off, but he fought the Chaos in the Chaotic Realm and freed himself from his destiny, which seemed to me a nice end point for the timeline. DoS pretty much said: wait, he didn't free himself from his destiny and could still become the dark lord. Not to mention, the story of DoS sucked. Some random cult is trying to create a new dark lord because while they fear the dark lord and worship God, the belief there needs to be a being that is the direct opposite to God. But, since when was Dracula the opposite of God? Before DoS came out, Dracula was just a really powerful vampire who sought the extinction of humanity.
As I said, DoS was just a poor excuse to reuse Soma and the AoS soul system. Oh, and let's not forget the unnecessary seals using the stylus for boss fights. Those were just an excuse to use the DS's stylus and dragged the game down even further.

SEED Destiny was the sequel to the shit, that was worse shit than the first. By that logic, Aria of Sorrow being great, Dawn was the first of the slippery slope down hill. That makes Portrait of Ruin the SEED Destiny, which leaves Dawn of Sorrow as the SEED.

I completely agree with Brauner being the best villain, and I lol'ed at what Lely said about Dracula in RoB.
If I understood the question, Dawn of Sorrow's villains were ridicule excuses for filling the bad guys role in a game with a pretty bad story.

No, its since AoS, since Nostradamus prophecies are related to Dracula coming back at 1999. Thats not me saying that, its in the game.

Dmitrii is so pathetic that at my first playthrough I've got this same idea, but instead of attacking him, I've run until the other side of the room and charged my bow until he come close to me, you know what thats mean? 1 hit KO (2 if you count this plant).

Fighting Dmitri was hilarious when you spam him with the Student Witch soul. "HAHAHA MREEEEOOOW HAHAHAHA REEEEEEEOOO"
That being said, I'd say the first two DS games kind of gave that feeling which OP describes. The scene where you beat Death in PoR... I felt almost as offended as Death probably would have. He was probably suicidal for a bit, being spanked by a walking pair of anime tropes.
And I really wish the stupid cult mentioned in the Sorrow games would have had an actual presence and threat. Less Saturday morning cartoon villain, more Reverend Kane from Poltergeist 2.
