Long story short, How come he's supposed to be 18 years old forever, but his hair grows in his sleep. What i mean is from CV3 forward. The rest of the guy doesn't age but his hair still grows?¿ mindblown

This came up in a convo very recently actually... There were some others that were pretty good but i thought there was actually some sort of explanation why.
But yea, AL has a sassy level of 1000.

Well, he's only half vampire so he should technically age, just very slowly.

Well just because Alucard doesn't age does not mean his hair and nails won't grow. Those things have nothing to do with longevity. You can use Connor MacLeod from Highlander as an example of this. He is immortal but his hair still grows out.

How about trying to explain how he goes from being a full vampire in AjDen to a half-breed in AjDX:NitM?

I've always thought that, since he was sleeping in a coffin between CV3 and SOTN, it might be a nod to the incorrect but long and widely held belief that dead bodies continue to grow their hair and nails. Which I've seen referenced in a lot of old folk/pulp lore about horror and vampires. What actually happens in that case of course is that the body shrinks/shrivels over time making the hair and nails look longer.
More likely it was just a styalistic/art choice though. Lots of masculine heroes took a cue from Fabio and grew long hair in the 90s. Hercules, Duncan MacLeod, even Superman sported a mullet for a while. And you gotta admit that Alucard's hair looks fabulous flowing behind him.

He has long hair in his cameo in the CoD manga and that SotN tie-in/advertisement that Kojima did which is set during Lisa's death. It's more a retcon than anything else.

Well, that's exactly what it all is. Take, LoI the whole game is a retcon.

Pretty much, yes. When it comes to IGA canon, you should ignore pre-SotN stuff in general, except the bits that have been referenced afterwards. Which is why trying to rationalise character X's different appearances is an exercise in futility.
Also, does anyone else agree that talking about Alucard's hair length is a sign we're running out of things to talk about?

Konami need to release another Castlevania... One that's not a piece of shit, and then we will ALL have something to talk about. :)

Absolutely, yes.
It's also telling that we have more Castlevania projects in production here than Konami does.
