I'm thinking they could just buy the land, bulldoze over those castle ruins (there's even a convenient lake there), and build suburbs.

Castle isnt always in the same spot though is it? some games have you going through the castle ruins.
Laura and Gabriel arrive in the deepest cave of the castle and... they find IGA.

Doesn't Johnathan say she's "like his kid sister" at one point? I always figured that whatever they had going on was more friendly than romantic.
