Legacy of Kain has a nice interpretation of Vampires. While some of them have human characteristics, many of them evolve (or devolve) into some sort of beastly appearance.  Examples are Vorador, Turel, and Kain himself, who seems to have developed a demonic appearance. 

Also, for some reason, all of them have three claws on each arm instead of fingers.

Where's the option for both. Like human looking ones that can transform into beasts. That's my favorite

This. I want mah vampires to be able to pass for human but transform into hideous beasts when necessary.

Or, basically, of the vampires in the CV series since the beginning. Dracula, Olrox, Carmilla and Elizabeth Bartley all come to mind, as far as the older ones are concerned. That's how I like my vampires. Not to mention, each one's "demon form" tends to differ from each other, showing a sort of individualism. I liken it to the vampires in the original Fright Night(hence my avatar). Jerry Dandridge, turning "vamp form" looks nothing like Evil Ed or Amy. Evil Ed's teeth are totally different(almost given rat-like incisors), and Amy gets the "Mouth of the South". In CV, Vampires tend to transform into different demonic forms. Dracula almost always transforms into a large, hulking horned demon(but in CV3, he tranforms into a form that resembles the Estruscan death god Charun). Olrox transform into a giant, reptillian monster. Carmilla transforms into a giant woman(or demon winged woman, as in CotM) riding a giant skull(in LoS, she transforms into a bat-like she-demon). Elizabeth Bartley transforms into a Medusa. I always loved that about the CV vampires.

The pig orcs in LoS were dreadful. I'd much prefer human-looking ones that may have the ability to transform into something demonic (a la Dracula, Olrox and Carmilla) if they're powerful enough. And no, not transform into pig orcs, but something more akin to what the aforementioned three transform into.

Of course, as vampires were concerned, I always loved the idea that they were the nobility of the monster world. That you rarely seen them as normal enemies in the classic timeline(other than the ones in CV64/LoD and the Draculinas in OoE) and most of the time, they are so powerful, they are bosses. It makes them seem "special".

Also something I like. I see people sometimes complaining about the lack of vampires, but I'm fine with it for this reason.

Thos epig orcs were not human so they had to look like a bat. Carmilla was kickass and his 2nd form very cool, shame we didn't get to see Laura's 2nd form  :(

I always like to think that Alucards randomly occuring "gargoyle" stoned pose is what his monster form would look like.
Laura and Gabriel arrive in the deepest cave of the castle and... they find IGA.

I don't think I would've liked Olrox or Brauner if they were even just regular demons. As for vampires, I'd like them to be pretty human unless they're really strong. I mean, they're basically undead humans anyway. I'm more intrigued by these intelligent once-living serial murders who are dead humans anyway than uh, monsters. Monsters are just so much more brute in appearance than the type of deceptive air I'd like a vampire to have.
