They could have kept Sonia Belmont's story and just modify the rest of the story so it fits somewhere inbetween Leon and Trevor.
It's so easy, but its too bad they aren't creative and open minded enough to see how her story can be remade so it fits.
Well here are some ideas. It's a shame they made Leon wield the vampire killer first, but here are some fixes they could do to reboot Castlevania Legends.
1. Sonia Belmont could be retconned as Leon's daughter.
2. Since Sonia is his only child, Leon could create a tradition where any women within the Belmont bloodline would keep the Belmont name even in marriage, and her husband, if found worthy, would inherit the Belmont title as well. Any objections to the tradition would automatically find her husband unworthy.
3. Cut out the whole Alucard element of the story.
4. The story would have Sonia at the same age she was in Castlevania Legends. Trained
by Leon himself, Sonia now wields the Vampire Killer. They live in a small house, and Sonia can return there for advice from Leon. Leon doesn't go with her because he believes she is old enough to prove her worth, and the Belmonts cannot be strong if they don't learn to survive on their own. Sonia travels to a mysterious castle after sightings of monsters have become more frequent, and word has spread about the castle that appeared in the forest.
So basically Sonia's adventure begins.
The main villain could be a new vampire, and the plot twist could be that vampire was made into a vampire by Mathias, with some backstory to go along with it.
That vampire could in fact be Sonia's ex-fiance, who was against the Belmont tradition that Leon forged, and so was rejected by Leon as well as Sonia herself, who greatly respected her father. When that vampire was human (lets call him Nero for now), he cursed at the Belmont name, loud enough for Mathias to take notice. And Nero swears to kill Leon and Sonia for rejecting him.
At the time, Mathias is still bitter about losing Elizabetha, grants Nero an offer and makes him a vampire. He tells Nero that he would be destroyed by the Belmont power if he fought them now, so he grants him a castle he recently created, and allowed him to use the monsters to spread terror and draw Leon and Sonia into a trap. Mathias did not expect Sonia to travel to the castle alone, but he made Nero a vampire to test how strong the Belmont clan has become (this is when Mathias still had his clever attitude before becoming more arrogant and overconfident like Walter.) A single Belmont was able to conquer an entire demon castle, Mathias wanted to observe if Leon's daughter possessed the same potential, or perhaps surpassing the power Leon held.
Before Sonia Belmont kills Nero, Mathias had met a woman named Lisa. Mathias began to discover love again. Mathias remembers the plan he created after Nero is killed, but by then, he didn't care for the Belmonts or his revenge. (okay this part is kind of not so good, see Another Version for some improvements:)

Leon could be Sonia's grandfather that's passed away. Sonia's father (lets call them Rune for now), could be the one that invents the new tradition.) that would give more time for Mathias to meet Lisa, and have Alucard.
The whole ex-fiance part of the story would still be there (rejected for opposing the family tradition for marriage with a female Belmont),
but since Mathias is in love with Lisa, he is back to his kind self. He could probably make the ex-fiance a vampire because of the bad blood between himself and Leon. Although he found love again, he cannot forgive Leon, and he remembers that Leon will never forgive him as well. So he lends the new vampire, Nero, a castle to
And after Sonia Belmont kills Nero, around that time, Lisa is killed by the townspeople and Mathias names himself Dracula from then on. His rage was so great that he destroys Castlevania itself. Alucard also feels hatred towards humans as well (until being defeated by Trevor much later.) So the last part of the ending shows Sonia Belmont and her new fiance getting married, and the vampire killer whip would be seen.
note: added changes, revisions, adjustments:You know, about the Dracula destroying Castlevania part (which is silly), that makes me think it would be even better if Sonia Belmont's story begins as Trevor's daughter.
So it could take place
after Curse of Darkness, and doesn't interfere with anything else. They could develop some kind of premature Dracula ressurrection like Curse of Darkness, or Symphony of the Night.

after 3 revisions, Sonia's story really sounds better and easier to fit into the main timeline! And that was developed in just a few minutes! It can be refined even further, but its just some examples how they can reboot Castlevania Legends and keep Sonia Belmont in the main timeline, as well as open the doors for Belmont women to inherit the vampire killer and defeat Dracula or other lords of darkness as well!
the mainstream fans are open to remakes and reboots, so it's entirely possible for Sonia Belmont and Castlevania Legends to develop a new refined story that fits somewhere, either after LOI, or COD. And if it's after COD, they could solidify Trevor's condition. Whether he survived or doesn't, Sonia could already be born before CoD started. And her mother, Sypha, could have some role in the story too (at least in the first area of the gameplay, or intro.)
So yea, some ideas. I was going to just delete the rough first attempts at remaking the story, but just wanted to show all I've come up with recently.
