Problem advancing on Castlevania: HoD

Since I finally got this game on the PS3, I've been able to just beat it, but I never find any new items inside the levels or in the shop. I find it very difficult to level up my character (I use Charlotte).
To defeat Dracula I had to use another characters. Charlotte is just very weak.
And when some months ago, courtesy of a fellow dungeonite, I could download all the DLC's, I was very happy with the new levels, characters and music, but I couldn't beat one of them. They are way to hard to be played with weak characters.
I spent more than 100 hours trying, mainly with Charlotte and recently with Maria, and I don't find a way to level them up or do anything new.
Can anyone please help me with this?
Thanks!  :)

Note: I play offline, since I own a PS3 with jailbreak.

You see, that's a problem you have there, because whip and magic using characters, need to use the spells or their sub weapons to level up and to max them out off line, it will take forever, but if you could go on line, there is a trick to level up them very fast. So the only option for you is Soma or Alucard as a second choice.

Supposedly, Charlotte is the easiest character to level up.  All the other characters take a very long time to level up towards the end.  Charlotte gets stronger as she absorbs more spells.  She can absorb nine of each spell, and her stats will increase a little with every few additional spells she learns.  You'll see that her basic attack animation changes once in awhile.  You don't get a new attack every time she levels up, but at least you can see some indication that she's making progress.

All of the DLC chapters are tougher than the original six chapters.  Level 7 is probably the easiest of the DLCs.  Chapters 10 and 11 are brutal until you get your character leveled up.

If you have questions about how the characters work or which levels give you which equipment, check out http://alternateharmony.proboards.com/index.cgi.  It's easily the best HoDespair resource online.  Or just ask your questions here and I'll do the best I can to help you out.  But playing online is really what this game is all about.  I'm not too familiar with jailbreak, so I don't know if there's any way to play online with it, but if you can it's totally worth it.

Thanks PFG9000!
Yes, playing this game with my brother was super fun, way more fun than playing alone.
But I seem to like it way more than him, so I just find myself through free time trying to beat some new levels or get new items. But the sop never adds anything new and the chests on the stages always give me the same useless items (usually, food or basic weaponry).
I'll check the guide, thank you very much  ;D I'll be trying this weekend with guide besides me.
I'll post the progress here if I can (the lack of progress, if that's the case, anyway  :P).

A software that allows your PS3 to run downloaded backups of PS3 games (pirate copies) as if they were original.
Now there's a better option: Rogero. Easy to install (a couple minutes) if you have 3.55 firmware.
But I can't play online because I've been told that if the console is detected it will brick.
