I use Noteworthy Composer for the sheet music/MIDI file.  Then I record using Winamp's Diskwriter plugin to a WAV file, and then I use Creative Playcenter to convert to MP3.

Noteworthy is also good for sheet music. ;)

wow good job man. Lovin' the mp3. Reminds me of back in the day when I used to spend countless hours scouring the castle looking for new DSS cards and passages. Still Pisses me off to no end that Iga removed this great title from the time line. This was the best castlevania since 1997 when it came out.
