2. I've been playing Cv from the beginning (I'm nearing 40), and I can honestly say that, as an oldschool fan that YES, LoS feels very much like a Castlevania game.
LoS felt more like a classic Cv game than the majority of the Cv games to come out over the past 10 years. IMO. 
3. The old timeline has become a convoluted mess, thanks for IGA's amazing non-ability to craft a story. I'm glad they rebooted it.

I`ve been a sick fan of Castlevania series since the first one, the lore and visual really touch my life in some way and personally (theres i a lot of mixed feeling about the game and i respect them all) i felt this game more like castlevania all the visual and places felt like the old games made me feel lot of desolation and sadness, if we go to the vampire as main boss you wont find it because the game itself is explaining the very beginning of all and i love that they toke the time to explain with lot of details the beginning and thats a strong point, also the story seems to be lot before of LoI and connected in 2 or 3 ways (of course this is an alternate timeline but it nods some things from LoI).
Anyway im big fan of Castlevania 2D games (until DS franchises i've only bought a DS cuz castlevania games in fact are the only games i have for DS but they started to feel less and less like castlevania, dunno if this is cuz IGA first does the game then the story or cuz Konami have the IGA budget low) i never ever ever ever liked castlevania 3D also neither GoW or Devil May Cry games but this really got me, for me got back the vibe i long for.
Also the games Apple of Discord, is the ending it will blow you and then hate it or love it, to tell the truth when i saw it i was like "hell no no no nooooo **** why?" and after seeing it again i was "what the hell why not!!!! its cool and can connect the Belmont clan story in many ways it can fit, hell yes!"
The game is strong and its like watching a movie most of the time, again you wont find lot of Castlevania elements (bosses, enemies or LOT LOT vampires) here but ill say it again its beginning this is the how it started all, if you are not bothered its not the canon line like you said give it a chance you may like it and besides it seems you will see lot more of this time line in the near future, like Cox said castlevania can have 2 timelines i agree many comics has the "what if" timeline.
