I think they should hire Wojciech Kilar to do the music. He could expand on what he did for Brahm Stoker's Dracula. Although if he did a slow haunting remix of Bloody Tears I would be cool with that.
As for other things, have the action serve the story and not the other way around. If it is set in a specific time period please have the sets and props seem realistic and appropriate (no automatic multibolt cross bows a la Van Helsing).
Lastly, focus on a damn good story. You have a chance to reinvent the battle against the greatest vampire since Nosferatu so please no wolfman, or Frankenstien or insert cheesey monster here. Yes he can control legions of the undead, change into mist, wolves, bats. but also ground the film in reality, so that while Dracula has supernatural powers, have the hero be grounded in reality so that the battle is that much harder and more satisfing.
