Not counting Castlevania games, because most of us would choose a Castlevania as a favourite for each console, I'd like to post my favourites and ask for yours.
I think a personal favourites list can say a lot about each of us.
So here they are, these are my favourite games, one per console, not counting Castlevania.
I hope you like it! :)

GB: Gargoyle's Quest
NES: Gargoyle's Quest II
SNES: Final Fantasy VI
GBA: Riviera: The Promised Land
NDS: Final Fantasy III
PSP: Prinny: Can I Really Be The Hero?
PSX: Alundra
PS2: Radiata Stories
Wii: Okami
WiiWare: Megaman 9
Xbox 360: Eternal Sonata
Xbox Live: Megaman 10
PS3: Star Ocean: The Last Hope

Now I'm tired, eternally walking... forever dying, and never stopping. I feel in sorrow, all I see is white. I’m following a blind way beneath a sad sky.

This is too difficult.

Hmmm I would have to think about it.

But I will say that for right now my favorite games on the gba and snes not counting cv is fire emblem and megaman X as the number 1 spot fe is number 1 regardless I have beaten it so many times that I can go through it without losing anybody it is  abit disappointing that I could not play  sword of seals. It has perhaps my favorite female fire emblem character( she is definitely in my top three maybe she even takes first place) take a guess who it is  :P

Hmm, this'll be interesting.

NES: Legacy of the Wizard
GB: Gargoyle's Quest
SNES: Super Mario World 2: Yoshi's Island
Sega Genesis: Sonic The Hedgehog 3
GBC: Legend of Zelda: Links Awakening DX
N64: Worms Armageddon
Playstation: Crash Bandicoot 3: Warped!
Playstation 2: Devil May Cry 3: Dante's Awakening - Special Edition
Nintendo Gamecube: Metal Gear Solid: Twin Snakes
Xbox: Halo: Combat Evolved
Gameboy Advance: River City Ransom EX
Xbox 360: Bayonetta
DS: Pokemon SoulSilver
3DS: Tetris Axis
PC: Baldur's Gate

I think that covers it for me. Admittedly though, I've never played a lot of N64 games, and the Zelda games just don't impress me that much. They're fun, but not even close to the best games ever, despite all that the crazy nostalgia-filled people my age may say. I liked the 64 'Vanias better, as well as Mario 64. Worms Armageddon is hilarious though, and I've spent a lot of time on that one. The Nintendo 64 is probably my least favorite console.

let's see

nes:hmmm... I like ninja gaiden yeah it took along time more than 10 yearsbut I did it.

gb:link's awaking: This is perhaps the saddest zelda game the ballad of the wind fish has made me teary at times  :-[  :'(

Snes: Still megaman X it's tie with CVIV gradiusIII is also up there

Genesis: I do not have alot of games my self but, I have played abit from my cousin and such but, I would say maybe phantasy star II,golden axe, or streets of rage

Turbografx 16: I only have two games, four if I count the two on my wii and my favorite is none other than Y's book Iand II. I'm sure there is a Y's fan or two on the cvd  ;)

n64: either super smash bros or zelda majora's mask

ps1:This is very difficult but I do love me some metal gear, and suikoden II is a masterpiece.

Staurn: Darkstalkers is some fun stuff, also space suit leynos IIRC it's a 2d mech game good stuff.

GBC: pokemon yellow or dragon warrior I/II

GBA: Fire emblem is perhaps the most played game for me on that system and perhaps the one game I have passed more than anything.

Dreamcast: Gradnia II Ryudo might be a smartguy but I see where he comes from and his story as well as the rest of the team will get back into it soon. After that would have to be Shenmue It's a very placid game and the reason why I wanted to get a dreamcast for christmas in 12' I like much more than gta or something like that.

GCN:Hmmm Legend of Zelda the wind waker is a big plus in my book.

Ps2 is really hard but, I do love me some onimusha 2.

Psp: mmmm...Peace walker is a good one in fact it was good enough for me to get it signed by the man himself.

Wii:an other hard one I do like other M  :P skyward sword is ehh to me.

Wiiware: hmm I like megaman 9.

360: Dark souls and tales of vesperia take this one.

Xbox live: I like hard corps uprising all the others I have are ports of other games.Been awhile since I pluged this in.

ps3:As of right now I like tales of graces F

psn: megaman 10

Oh yeah, almost forgot 2 of them:

PC: Civilization 2: Multiplayer gold edition (Favorite fan made scenarios are Ancient Empires 1, Arabs, Turks, Hasburgs, Ascend, and too many others to list here.)
Atari 2600: Joust (Only other game my family had for it was Big bird's egg hunt, plus the system broke several months after my 2nd birthday, so I barely remember playing it. 8))

Atari 2600 - Tie between "Space Invaders" and "Missile Command"
Game Boy - Final Fantasy Adventure (aka "Mystic Quest" or "The first Seiken Densetsu/Mana game")
NES - Astyanax
Master System - Phantasy Star
Genesis - The Lost Vikings (SNES version has MUCH better music but this has extra levels, and the Genny doesn't have FF6 so easy decision for this list lol.)
SNES - Final Fantasy VI
DS - Chrono Trigger (Or at least it's shaping up to be a favorite, playing it for the first time now!)
Saturn - Vampire Hunter aka Darkstalkers 2
PS1 -  Final Fantasy IX
PS2 - Sly 2: Band of Thieves
Gamecube - The Legend of Zelda: Twilight Princess
---------------------------
DOS Era PC - Doom (Or just Doom engine games in general.)
Older PC - Serious Sam Gold
Non-FPS PC - Vampire the Masquerade: Bloodlines

Multiplayer Only - Killing Floor (Well there technically is a single player mode but there's no real storyline or campaign. It only exists for impatient people to grind all their classes to level 6 then die anyway because they still don't actually know how to play.)

I didn't add N64 and GCN to my list because I've played only a few games on that consoles...
And I never played Saturn or Dreamcast with the exception of Castlevanias (Nocturne in the Moonlight and Symphony of Destruction, the MOD).

But if I had to choose...

N64: Ocarina of Time.
GCN: Final Fantasy Crystal Chronicles.

The only systems that I've played that I won't add to this list is the Dreamcast and Saturn because I've only played a few games from them. It was hard to choose some of these, actually. When you take Castlevania games out my lists, most of these are RPGs. Oh, and I left the PS3 off because out of the 10 games I have for it, I couldn't really choose one.

NES: Clash at Demonhead
GB: Pokemon Red
SNES: Super Mario RPG Legend of the Seven Stars
Genesis: Sonic the Hedgehog 2
Sega CD: Lunar Eternal Blue
GBC: Lufia The Legend Returns
PSX: Lunar 2 Eternal Blue Complete
GBA: Kingdom Hearts Chain of Memories
PS2: Devil May Cry 3
GC: Tales of Symphonia
DS: Pokemon White
PSP: Kingdom Hearts Birth By Sleep
Wii: Mario Party 8 (My friends make this game awesome)
360: Tales of Vesperia
