The camera will pick the worst spots to display the battlefield.  For example, in front of a character's back so that he/she completely blocks our view of the other character.  It's nearly impossible to tell how far away the characters are from each other in this situation, and that's sort of a bad thing in a fighting game.
You have time to move around before the fight starts, so it's not really a problem. Unless you mean during battle, but it's only happened to me twice.

What characters can you fight Death or Dracula with in story mode? I know I've come across both of them (I think Dracula with Alucard) but I want to get to them to record their music.

dracula is fought with Alucard and Aeon, Dracula is also the final Boss of Arcade mode, usually in the clock tower, and tends to (force push) you off the level,

Death is fought with err, i'm honestly not too sure, since i was getting the characters, lol

Also has a sound track or OST for Judgement been released yet?

Anywho, with the accessories you can get in the game, is it possible to give the characters their normal outfits, or is it just wacky shit like top hats  and stuff?

I'm totally giving Death a top hat like he has in RoB

Death can be fought as Cornell.

I think you unlock them by playing through the story mode.
